Recipe: Homemade Shotgun Sally Snack Bars

Yields: 12 bars


Ingredients:

1-1/2 cups rolled oats

1/3 cup honey or maple syrup

1/4 cup almond butter (or your favorite nut butter)

1 cup semi-sweet or dark chocolate

1 tbsp refined coconut oil

OPTIONAL - 1 cup chopped nuts (e.g., almonds, walnuts)


Instructions:

Line a large loaf pan with parchment paper.

In a large mixing bowl, combine the rolled oats, your favorite nut butter, and honey (OPTIONAL chopped nuts).

Transfer the nut butter oatmeal mixture to the lined loaf pan, spread and press down evenly with clean hands or a spatula.

In a separate microwave-safe bowl, heat the chocolate and coconut oil. Microwave in about 30 seconds intervals and stir in-between until chocolate is melted and smooth.

Pour the wet mixture over the oat layer. Spread evenly with a spatula.

Place in your refrigerator to set for 2-3 hours.

Remove and then cut into bars with a warm knife (warm your knife by running it under warm water).

Store your Shotgun Sally Snack Bars in an airtight container for up to a week.
